Fiery, Fresh Tomato Salsa

  • 3 tomatoes, chopped
  • 1/2 cup finely diced onion
  • 5 serrano chiles, finely chopped (reduce number for less spicy)
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon salt
  • 2 teaspoons lime juice
  • Optional: 1 fresh garlic clove

In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, and lime juice. Chill for one hour in the refrigerator before serving.

Green Tomato and Bell Pepper Delight

To be Served as a side dish, or top it on a baked potato or some rice.

  • 2 tablespoons olive oil
  • 4 green tomatoes, chopped
  • 1 green bell pepper, chopped
  • 2 celery, chopped
  • 1 bunch green onions, chopped
  • 2 tablespoons apple cider vinegar

Heat olive oil in a large skillet over medium heat. Stir in green tomatoes, bell pepper, celery, green onions and apple cider vinegar. Saute until tender crisp, about 5 to 10 minutes.

A Delicious Twist: Substitute red peppers for the tomatoes, and yellow onions for green.

Squash and Zucchini Casserole

PREP TIME: 20 Min    COOK TIME: 30 Min     SERVINGS: 5


  • 2 medium yellow squash
  • 2 large zucchini
  • 1 Vidalia onion, thinly sliced
  • 2 large tomatoes, sliced
  • 2 cups grated Romano cheese
  • 1/2 cup butter, divided
  • Salt and pepper to taste
    Preheat oven to 375 degrees F (190 degrees C).
  2. Cut the zucchini and squash into long, thin layers.
  3. Lightly grease a 7x11-inch baking dish and layer the squash, zucchini, onion and tomatoes into the baking dish.
  4. Sprinkle with cheese and add pats of butter between each layer of vegetables, and season each layer with salt and ground black pepper to taste.
  5. Continue this layering process until all the vegetables are used up and top this off with the remaining butter and cheese.
  6. Cover and bake at 375 degrees F (190 degrees C) for 20 to 30 minutes, or until vegetables are to desired tenderness and cheese is melted and bubbly. (You might want to put a cookie sheet or something under this dish as it bakes, because it sometimes bubbles over.)
